Mazurek


Continuând cu duciurile poloneze, am încercat mazurek (mah-ZOO-rek), o prăjitură tradiţională de Paşte, foarte subţire, constând dintr-o crustă şi diverse umpluturi (gemuri, nuci, migdale, mac, bezea, fructe proaspete sau uscate, creme etc.). Poate fi şi decorată, cu migdale, ciocolată, glazură de zahăr pudră. Se pare că originile acestei prăjituri sunt de fapt turceşti. O combinaţie interesantă, de gusturi, texturi şi culori!

Eu am urmat această reţetă, cu mici modificări. A primit aprecieri la scară largă, aşa că vă invit din toată inima să o încercaţi!
Vreau doar să vă atrag atenţia că trebuie să se “odihnească” la frigider măcar 24 ore. Deci dacă vreţi să o pregătiţi pentru o ocazie deosebită, să o faceţi din timp.

MAZUREK


Crustă:
  • 200 g făină integrală (sau un amestec de 170 g făină obişnuită şi 9 g germeni de grâu)
  • 90 g unt rece, tăiat cubuleţe
  • 2 gălbenuşuri
  • 30 g zahăr pudră
Umplutură:
  • 350 g prune uscate fără sâmburi
  • 6 linguri rom (de calitate; a ieşit destul de aromată, dacă vreţi un gust mai discret, puteţi să puneţi mai puţin)
  • 80 g nuci, mărunţite grosier
Topping şi decor:
  • 100 g ciocolată neagră
  • 100 g ciocolată cu lapte
  • 100 ml smântănă dulce

Începem cu aluatul pentru crustă. Cel mai uşor este să utilizăm un robot de bucătărie, în care amestecăm făina, zahărul şi untul până obţinem un amestec nisipos (câteva secunde).



Adăugăm apoi gălbenuşurile şi amestecăm până ce aluatul se leagă.



Învelim aluatul în folie alimentară şi îl dăm la frigider pentru 30 de minute.


Preîncălzim cuptorul şi ungem cu unt o tavă de circa 30x20 cm.
Scoatem aluatul din frigider şi îl întindem între două foi de hârtie de copt până este destul de mare ca să acopere tava (nu vă îngrijoraţi dacă nu obţineţi o formă perfectă, o puteţi aranja după ce puneţi aluatul în tavă, tăind bucăţile în exces şi acoperind cu ele golurile).





Acoperim fundul tăvii cu foaia de aluat şi dăm la frigider pentru 15-20 de minute...


... apoi înţepăm aluatul cu o furculiţă...


... şi îl coacem circa 20 de minute, pe raftul din mijloc, la foc potrivit. Ar trebui să se rumenească puţin, dar doar atât, aşa că mare grijă să nu se ardă!


Lăsăm apoi crusta să se răcească bine.

Pentru umplutură, amestecăm în robotul de bucătărie prunele împreună cu romul până ce obţinem o pastă omogenă.



Amestecăm apoi, într-un castron, pasta de prune cu nucile mărunţite.



Acoperim crusta cu pasta de prune şi nivelăm.




Pentru topping, topim 100 g ciocolată neagră şi 50 g ciocolată cu lapte cu smântâna dulce, într-un castron, la bain-marie.



Când amestecul este omogen, îl turnăm peste prune şi nivelăm.



Lăsăm toppingul să se răcească la temperatura camerei, apoi acoperim tava cu folie de aluminiu şi dăm la frigider pentru cel puţin 24 de ore (ştiu, e lungă aşteptarea, dar merită!).

Când este gata pentru a fi servită, scoatem prăjitura din frigider şi o decorăm.


Pentru asta, topim restul de 50 g ciocolată cu lapte la bain-marie şi, folosind un poş, decorăm prăjitura.





Tăiem prăjitura (cam 12 bucăţi potrivite) şi o servim. Păstrăm restul în frigider, acoperită cu folie de aluminiu.

To continue with Polish desserts, I tried the mazurek (mah-ZOO-rek), a traditional Easter cake, very thin, consisted of a crust and various fillings (jams, nuts, almonds, poppy, meringue, fresh or dry fruits, pastry cream etc.). It can be decorated, with almonds, chocolate, icing. It seems that the origins of this cake are actually Turkish. An interesting combination, of tastes, textures and colors!

I used this recipe as an inspiration. The cake received positive “reviews”, so I invite you whole heartedly to try it yourself!
I just want to draw your attention to the fact that the cake must “rest” in the refrigerator for at least 24 hours. So if you want to make it for a special occasion, be sure to make it in advance.

MAZUREK

Crust:
  • 200 g wholemeal flour (or a mix of 170 g wheat flour and 9 g wheat germs)
  • 90 g cold butter, cut into pieces
  • 2 egg yolks
  • 30 g icing sugar
Filling:
  • 350 g seeded prunes
  • 6 tablespoons Rum (quality Rum; the cake was quite flavored, so if you want a more delicate flavor, you can use less)
  • 80 g walnuts, chopped coarsely
Topping and decoration:
  • 100 g dark chocolate
  • 100 g milk chocolate
  • 100 ml heavy cream

First, we make the pastry. The easiest way is to use a food processor, in which we mix flour, icing sugar and butter until we have a crumbly mixture (just a few seconds).
We then add the egg yolks and process until the dough comes together.
We wrap the pastry in plastic and refrigerate for 30 minutes.
We preheat the oven and grease an approximately 30x20 cm tin.
We remove the pastry from the fridge and roll it between two parchment sheets until it's large enough to line the tin (don't worry if the shape is not perfect, you can arrange it after you put the pastry in the tin, by cutting the extra pieces and covering with them the blanks).
We line the tin with the pastry and refrigerate for 15-20 minutes, then prick it with a fork and bake the crust for about 20 minutes, on the central shelf of the oven, to medium heat. It should brown lightly, but not more than that, so be careful not to burn it!
We let the crust to cool completely.

For the filling, we process in the food processor the prunes with the Rum until smooth.
Then we mix in a bowl the prunes jam with the chopped walnuts.
We spread it over the crust and level it.

For the topping, we melt 100 g dark chocolate and 50 g milk chocolate with the heavy cream, in a bowl over simmering water.
When the mixture is smooth, we spread it over the prunes.
We let the topping to cool at room temperature, then cover the tin with foil and refrigerate for at least 24 hours (I know, it's a long wait, but not in vain!)

When it's ready to serve, we remove the cake from the fridge and decorate it.
For that, we melt the remaining 50 g milk chocolate over simmering water and, using a piping bag, make decorations on top of the cake.
We cut the cake into pieces (about 12 medium) and serve it. We keep the remainings in the refrigerator, covered with foil.
