Biscuiţi cu rozmarin / Rosemary cookies


A doua reţetă promisă şi dezvăluită mai devreme este cea de: 
  
BISCUIŢI CU ROZMARIN 


Nu sunt foarte greu de făcut, deşi necesită mai mult timp de pregătire, şi sunt foarte buni, crocanţi pe dinafară, moi pe dinăuntru şi foarte aromaţi (reţeta e preluată de aici). 

Strângem deci pe masă următoarele: 
  • 225 g unt moale (la temperatura camerei, nu topit) 
  • 150 g zahăr 
  • 1ou 
  • 1 lingură de rozmarin proasptăt tocat 
  • 320 g făină 
Mai avem nevoie, puţin mai târziu, de: 
  • 1 albuş 
  • 100 g zahăr pudră 
  
Batem bine untul cu zahărul până obţinem o cremă. Adăugăm oul şi amestecăm bine. 


Adăugăm apoi rozmarinul şi, treptat, făina, amestecând până obţinem un aluat omogen. 



Împărţim aluatul în jumătate şi facem două suluri cam de 3-4 cm diametru (la mine nu au ieşit deloc egale ca lungime, dar n-a contat până la urmă), pe care le învelim în folie de plastic şi le lăsăm să se odihnească în fridiger cel puţin o oră.









Pregătim între timp tava, pe care o acoperim cu hârtie de copt. Pe o altă hârtie de copt presărăm zahărul pudră (eu nu l-am pus pe tot odată, ci câteva linguri, adăugând altele când am avut nevoie – chiar mi-a mai rămas puţin). Înainte să scoatem aluatul de la frigider, batem albuşul spumă. 
Tot acum preîncălzim şi cuptorul la 180°. 
Luăm un sul, îl ungem cu albuş şi îl tăvălim bine prin zahăr până se albeşte mai bine ca zăpada. 


Tăiem apoi cu grijă rondele de 1 cm (aşa ies mai groase şi mai moi în interior, dacă le vreţi mai crocante tăiaţi rondele mai subţiri). Le mai lucrăm puţin în mână dacă s-au turtit şi le punem în tavă, păstrând o mică distanţă între biscuiţi (2-3 cm). 


Acelaşi lucru facem şi cu al doilea sul, până umplem tava.


O dăm la cuptor pentru circa 20 de minute. Aveţi grijă să nu se ardă, cel mai bine este să verificaţi biscuiţii după ce trec 15 minute. Nu vă speriaţi dacă sunt puţin arşi pe fund, este de la zahăr. 


Mie mi-au ieşit două tăvi. 

Lăsăm biscuiţii să se răcească şi îi transferăm într-o cutie metalică. Eu m-am jucat puţin cu nişte creioane de decorat :)

The second recipe that I promised and revealed earlier is: 

ROSEMARY COOKIES

They are easy to make, although they require a longer time for their preparation, and they are very tasty, crisp on the outside and soft on the inside, and flavored (I found the recipe here).

We need the following ingredients:
  • 225 g soft butter (at room temperature, not melted)
  • 150 g sugar
  • 1 egg
  • 1 tablespoon of chopped fresh rosemary
  • 320 g flour
We'll also need, a little bit later:
  • 1 white
  • 100 g icing sugar

We mix the butter with the sugar until smooth. We add the egg and mix well.
We then add the rosemary and, gradually, the flour, stirring until well incorporated.
We divide the pastry in half and make two 3-4 cm in diameter rolls (mine were not at all equal as for their length, but in the end it didn't matter), which we wrap in a plastic sheet and let them rest in the fridge for at least one hour.

Meanwhile, we prepare our tray, covering it with a parchment sheet. On another parchment sheet we scatter the icing sugar (I didn’t put all 100 g, but a few tablespoons, adding others when needed – there were some left in the end). Before taking the pastry out of the fridge, we beat the white until smooth.
We also preheat the oven at 180° Celsius.

We take one roll, brush it with the egg white and roll it in the sugar until it becomes whiter than the snow. We carefully slice the roll every 1 cm (the cookies will be thicker and softer on the inside, if you want them to be crispier, you can slice them thinner). We play a little with the slices to make them well circular and put them in the tray, keeping a little bit of distance between them (2-3 cm).
We do the same with the second roll, until the tray is full.

We put the tray in the oven for about 20 minutes. Be careful not to scorch the cookies, it will be better to check them after 15 minutes. They may be a little scorched on the bottom, but that’s because of the sugar.
I obtained two trays full of cookies.
We let them cool and put them in a metallic box. I played a little with some decorating crayons :)
