Bavareză de pepene roşu / Watermelon Bavarian Cream


Încă de la începutul verii aveam în gând să fac o prăjitură cu pepene roşu. Pe lângă faptul că pepenii sunt sănătate pură, îi iubesc la nebunie. Aş mânca toată ziua (bine, poate nu chiar toată ziua… dar, înţelegeţi voi). Ce să fie, ce să fie? Aş fi încercat o îngheţată (wow, îngheţata de pepene roşu… am mâncat una extraordinară la Giolitti, gelateria mea preferată din Roma), dar voiam ceva mai deosebit. Aşa că… sunt mândră să vă prezint astăzi delicioasa:

BAVAREZĂ DE PEPENE ROŞU



  • 250 ml suc de pepene roşu 
  • 3 gălbenuşuri
  • 75 g zahăr fin
  • 1 linguriţă amidon
  • 1 linguriţă extract de vanilie
  • 12 g gelatină foi
  • 400 ml smântână dulce
  • 2 linguri bobiţe de ciocolată
Plus:

Pentru sucul de pepene, avem nevoie de o felie mare de pepene proaspăt.


Îl curăţăm bine de toate seminţele, îl tăiem cuburi şi îl dăm la blender (sau storcător de fructe).



Îl strecurăm printr-o sită fină, ca să eliminăm eventualele bucăţi rămase întregi.




Punem foile de gelatină într-un castron şi le acoperim cu apă rece. Le lăsăm să se înmoaie circa 5 minute.


Măsurăm 250 ml de suc, pe care îl turnăm într-o crăticioară şi îl încălzim puţin pe foc mic (nu trebuie să fiarbă, doar să fie călduţ).


Amestecăm gălbenuşurile cu zahărul, amidonul şi vanilia, până se omogenizează.



Adăugăm sucul cald, amestecând continuu.



Turnăm compoziţia înapoi în cratiţă şi o încălzim pe foc mic (din nou, nu trebuie ţinută prea mult).


Caldă, turnăm din nou compoziţia în castron şi adăugăm foile de gelatină bine stoarse.


Amestecăm cu telul până ce gelatina s-a topit complet, apoi lăsăm compoziţia să se răcească.



După ce s-a răcit crema, batem smântâna pentru frişcă şi o încorporăm în crema de pepene (dacă aceasta e prea gelatinosa, o batem uşor cu telul până devine cremoasă).

La sfârşit adăugăm bobiţele de ciocolată.



Ungem o formă cu gaură la mijloc cu un şerveţel îmbibat foarte puţin în ulei.


Turnăm crema, o nivelăm bine, apoi o introducem (acoperită bine ca să nu absoarbă alte mirosuri) în frigider pentru cel puţin 12 ore.




Pentru a o servi, scoatem forma din frigider, folosim un cuţit cu lama foarte subţire pentru a desprinde marginile (dacă forma e din silicon, folosiţi un alt obiect, nu un cuţit). Punem forma într-un vas mai mare în care am pus apă fierbinte, o ţinem câteva secunde (cam 10 secunde), apoi o răsturnăm cu grijă pe un platou.



Punem deasupra curd de pepene roşu şi o decorăm cu bobiţe de ciocolată (pe post de seminţe).

Since the summer began, I wanted to make a watermelon dessert. One: the watermelon is pure health, two: I just love watermelons. I would watermelons all day long (ok, maybe not really all day... but, you understand). So, what should I make? was my question. I would have tried an ice-cream (wow, watermelon ice-cream... I ate the best at Giolitti, my favorite ice-cream shop in Rome), but I wanted something "more" special. So... I am proud to present you today my delicious:

WATERMELON BAVARIAN CREAM

    • 250 ml watermelon juice 
    • 3 yolks
    • 75 g caster sugar
    • 1 teaspoon cornstarch
    • 1 teaspoon vanilla extract
    • 12 g gelatine sheets
    • 400 ml heavy cream
    • 2 tablespoons chocolate drops
    Plus:

    For the watermelon juice, you need a large slice of fresh watermelon. Deseed the watermelon, then cut it into cubes and blend it.
    Pass it through a fine sieve to eliminate any larger parts.

    Leave the gelatin sheets in a bowl with cold water to soften (about 5 minutes).
    Measure 250 ml juice, pour it in a saucepan and keep it on low heat until lukewarm.
    Whisk the yolks with sugar, cornstarch and vanilla extract just until all the ingredients are well combined.
    Pour in the warm watermelon juice, whisking continuously.
    Pour the cream back in the saucepan and leave it on low heat until it gets warm (that’s all, it mustn’t boil, nor get thicker).
    Once it's warm, pour the cream back in the bowl and add in the gelatin sheets, well squeezed before.
    Whisk until the gelatin completely dissolves, then let the cream to cool completely.
    Once cooled, whisk the heavy cream and then fold it in the watermelon cream (if the cream became too jelly, just whisk it a little until smooth).
    Finally, incorporate the chocolate drops.
    Grease scarcely a Bavarian cream mold or a one with a hole in the middle (you can use a napkin just a little soaked in oil).
    Pour the cream in the mold, level it and put it in the refrigerator (well covered, because you wouldn't want your dessert to catch other flavors). Keep it there for at least 12 hours.

    Before serving, remove the mold from the fridge, use a thin knife to detach the edges (if your mold is made of silicone, do not use knifes). Put the mold in boiled water for a few seconds (about 10 seconds), then carefully overturn it on a plate.
    Pour on top of the cream some watermelon curd and decorate with chocolate drops (= watermelon seeds).
