Kourabiedes


Astăzi mi-a fost poftă de ceva grecesc... iubesc Grecia, cu toate că nu am ajuns acolo decât o singură dată până acum şi asta acum mulţi ani... dar o iubesc, şi încă mult, pentru istoria, arta, credinţa, peisajele ei...

Ca să-mi satisfac pofta, am pornit în căutarea unor reţete şi am găsit o reţetă de biscuiţi, kourabiedes (κουραμπιέδες), care se fac de obicei cu coniac (Metaxa), vanilie, mastika sau apă de trandafiri. Eu am ales o altă variantă, care este folosită şi ea pentru a aromatiza dulciurile orientale şi care îmi aduce aminte de alte vremuri frumoase... apa de flori de portocal. Nu am să uit vreodată portocalii înfloriţi din Parcul Savello, sus de tot, pe Aventin, ce parfum, ce flori frumoase...

Dar să las deocamdată amintirile şi să vă povestesc reţeta.

KOURABIEDES


  • 150 g unt, la temperatura camerei
  • 100 g zahăr pudră
  • 1 gălbenuş
  • 1 lingură apă de flori de portocal
  • 200 g făină
  • ½ linguriţă praf de copt
Pentru pudrat:
  • 200-300 g zahăr pudră

Batem untul bine până devine cremos (măcar 10 minute).




Adăugăm pe rând zahărul pudră, gălbenuşul, apa de flori de portocal, făina şi praful de copt, amestecând la sfârşit cu o lingură de lemn până încorporăm bine făina – mie mi s-a părut puţin cam moale şi am mai adăugat 3 linguri de făină.







Formăm cu mâna biluţe şi le aplatizăm (ar trebui să aibă cam 1 cm grosime) – eu le-am făcut cam de 3 cm în diametru şi mi-au ieşit 2 tăvi (60 de biscuiţi).
Le aşezăm pe o tavă acoperită cu hârtie de copt.



Dăm tava la cuptor (preîncălzit la 180º) pentru circa 15-20 minute – trebuie să se rumenească puţin, nu să se coloreze prea tare.



Calzi, pudrăm bine biscuiţii cu zahăr pudră – putem să punem zahărul într-o pungă, adăugăm câţiva biscuiţi şi agităm bine punga, apoi repetăm cu ceilalţi biscuiţi – şi îi lăsăm să se răcească pe un grătar.

Today I was craving for something Greek… I love Greece, even if I went there just once and many years ago… but I love it, and a lot, for its history, art, faith, landscapes…

To satisfy my cravings, I looked for recipes and found a recipe for kourabiedes (κουραμπιέδες), some Greek cookies that are usually made with brandy (Metaxa), vanilla, mastika or rose water. I chose another flavor, which is used for oriental sweets as well and which brings back so many beautiful memories… orange flower water. I will never forget the blooming orange trees in Savello Park, up on the Aventine, such a perfume, so beautiful flowers…

But I’ll leave my memories for now and tell you the recipe.

KOURABIEDES

  • 150 g butter, at room temperature
  • 100 g powdered sugar
  • 1 yolk
  • 1 tablespoon orange flower water
  • 200 g flour
  • ½ teaspoon baking powder
To sprinkle on top of the biscuits:
  • 200-300 g powdered sugar

We beat the butter very well until smooth (at least 10 minutes).
We then add in by turn the sugar, the yolk, the orange flower water, the flour and the baking powder, using at the end a wooden spoon until the flour is well incorporated in the batter – I thought it was a little too soft and so I added 3 more tablespoons of flour.
We use our hands to make small balls of batter and then we flatten them (they should be around 1 cm thick) – I made them 3 cm in diameter and obtained 2 trays (60 biscuits).
We put the biscuits on a tray covered with parchment paper and put the tray in the oven (preheated to 180º Celsius) for 15-20 minutes – they should get lightly golden, but not brown.
When still hot, we cover the biscuits with powdered sugar – we can put the sugar in a bag, add in some of the biscuits and shake the bag, then do the same with the rest of the biscuits – and let them cool on a wire rack.
