Gogoşi Strasbourg / Strasbourg Donuts


Nu ştiu de unde le vine numele (adică dacă au sau nu vreo legătură cu oraşul Strasbourg), dar sunt foarte foarte bune şi nici nu trebuie prăjite. Le-am făcut de mai multe ori, după ce am găsit reţeta aici, iar mama le adoră!

GOGOŞI STRASBOURG


Aluat:
  • 500 g făină
  • 10 g drojdie uscată
  • 5 linguri zahăr
  • un praf de sare
  • 100 g unt, la temperatura camerei
  • 3 gălbenuşuri
  • 200 ml lapte
  • vanilie (zahăr vanilat, extract sau esenţă de vanilie)
Umplutură:
  • ciocolată
  • gem / dulceaţă
  • nucă etc.
Bezea:
  • 3 albuşuri
  • un praf de sare
  • 3 linguri zahăr
  • 3 linguri nucă măcinată + alte câteva linguri pentru presărat peste bezea

Încălzim laptele (nu trebuie să fiarbă).


Facem o maia din drojdie, o lingură de zahăr, puţin lapte şi puţină făină, pe care o lăsăm la crescut.




Între timp, mixăm bine untul cu restul de zahăr, un praf de sare şi vanilia.



Adăugăm gălbenuşurile unul câte unul, amestecând bine după fiecare.





Într-un bol mare cernem făina, adăugăm maiaua şi crema de unt. Începem să frământăm, adăugând treptat restul de lapte călduţ.






Trebuie să obţinem un aluat elastic şi moale, puţin lipicios.




Acoperim bolul şi lăsăm aluatul să-şi dubleze volumul, la loc cald – durează cam 1 oră.



Când este gata, facem biluţe de aluat potrivite (ies cam 14-16), pe care le turtim (în mână sau pe un blat presărat cu făină).




Punem în mijlocul fiecărei turtiţe puţină umplutură după preferinţă (eu am folosit petalele din dulceaţa de trandafiri rămasă de la Battenberg), ridicăm marginile şi le strângem bine.



Aşezăm gogoşile într-o tavă unsă cu unt sau tapetată cu foaie de copt şi le lăsăm la crescut 30 de minute, într-un loc călduţ – putem pune tava în cuptorul încins (evident stingem focul).




Ne ocupăm între timp de bezea, bătând albuşurile spumă cu puţină sare. Adăugăm apoi zahărul şi mixăm în continuare. La sfârşit încorporăm nuca, amestecând cu o spatulă sau lingură de lemn.








Cu această bezea acoperim gogoşile crescute.




Mai presărăm nucă măcinată şi dăm tava la cuptor (încins din nou), la foc potrivit, circa 30 de minute, până se rumeneşte puţin bezeaua.





Le servim fierbinţi, calde sau reci, în funcţie de răbdare.

I don’t know where their name comes from (I mean if they have or not a connection with the city of Strasbourg), but they are extremely tasty and they don’t need to be fried. I prepared them several times, after I found the recipe here, and my mother loves them!

STRASBOURG DONUTS

Dough:
  • 500 g flour
  • 10 g dry yeast
  • 5 tablespoons sugar
  • a pinch of salt
  • 100 g butter, at room temperature
  • 3 yolks
  • 200 ml milk
  • vanilla (vanilla sugar, vanilla extract or vanilla essence)
Filling:
  • chocolate
  • jam
  • walnuts etc.
Meringue:
  • 3 whites
  • a pinch of salt
  • 3 tablespoons sugar
  • 3 tablespoons ground walnuts + another few tablespoons to put on top of the meringue

We warm up the milk (it mustn't boil).
We prepare a leaven from the dry yeast, one tablespoon of sugar, some milk and some flour, and leave it to rise.
Meanwhile, we mix the butter with the remaining sugar, salt and vanilla.
We add in the yolks, one by one, mixing well after each one.
In a large bowl, we sift the flour, add in the middle the leaven and the butter cream. We start to knead the dough, adding gradually the remaining warm milk. The result must be an elastic, soft and a little sticky dough.
We cover the bowl and leave the dough to double the volume, in a warm place – it will take about one hour.
When it’s ready, we make some medium balls of dough (14-16), we flatten them (in our hand or on a worktop dusted with flour). We put in the middle of each patty our favorite filling (I used the remaining rose jam from my Battenberg , we raise the edges and bind them together.
We put the donuts in a greased pan (or with parchment paper on the bottom) and leave them to rise for 30 minutes, in a warm place – we can put the tray in the heated oven (with the heat off, of course).
Meanwhile, we prepare the meringue: we whisk the whites with a pinch of salt. We add in the sugar and whisk well. In the end, we add in the ground walnuts, using a spatula or a wooden spoon.
With this meringue we cover the donuts when they are well risen.
We sprinkle over some ground walnuts and put the tray in the oven (heated again), to medium heat, for about 30 minutes, until the meringue gets a golden-brown.
We can serve them while they’re hot, just warm or cold, depending on how patient we are.
