Julekake


Una din cele mai mari dorinţe ale mele este să călătoresc mult mult, cât se poate de mult... Până să ajung însă să fac înconjurul lumii de-adevăratelea, voi călători prin intermediul mâncărurilor şi dulciurilor specifice diferitelor ţări, regiuni, oraşe. Şi uite aşa am ajuns şi în Norvegia, cu această pâine de Crăciun. Este unul din cele mai bune lucruri pe care le-am pregătit şi cu siguranţă voi mai “trece” prin Norvegia, nu neapărat în preajma Crăciunului.
Descoperisem mai demult această reţetă din prima carte norvegiană de bucate, a Hannei Winsness, dar cum mi-era cam greu să dibuiesc cantităţile exacte, am tot căutat şi am găsit acest blog cu reţete scandinave, printre care şi cea de julekake. Aşa că m-am pus pe treabă! Este chiar uşor de făcut şi foarte foarte gustoasă! Norvegienii o mănâncă în dimineaţa de Crăciun cu unt şi geitost, o brânză tradiţională norvegiană. Eu m-am bucurat de ea simplă, alături de o cană cu lapte.

JULEKAKE


  • 280 g unt nesărat
  • 600 ml lapte
  • 50 g drojdie proaspătă
  • 1 kg făină
  • 125 g zahăr
  • 1 linguriţă sare
  • 2 linguriţe cardamom măcinat
  • 150 g stafide
  • 100 g coji de citrice confiate
Pentru uns pâinile:
  • 1 ou

Topim untul într-o crăticioară.



Când este gata, luăm crăticioara de pe foc şi adăugăm laptele. Amestecăm şi lăsăm să se răcorească.



Într-un castron mare punem făina (este bine să o cernem de 2-3 ori), drojdia mărunţită, zahărul, sarea şi cardamomul şi amestecăm.


Adăugăm amestecul de unt şi lapte şi amestecăm bine cu o lingură de lemn, apoi frământăm cu grijă – dacă aluatul este prea lipicios putem să mai adăugăm puţină făină (eu m-am descurcat doar cu un 1 kg).




Adăugăm stafidele şi cojile de citrice confiate tăiate bucăţele. Mai frământăm uşor cam 5 minute până încorporăm bine fructele (din cauza aluatului gras, fructele au tendinţa de a cădea).




Lăsăm aluatul în castron şi îl acoperim cu folie de plastic. Îl lăsăm să crească, într-un loc cald, cam 45 de minute, până se dublează.



Putem face 2 pâini mai mari sau 3 mai mici. Eu am făcut 3 şi am copt 2 într-o tavă şi una în altă tavă. A treia a stat mai mult la dospit şi mi-a ieşit mai mare. Data viitoare cred că voi face doar 2.
Deci împărţim aluatul în două sau trei bucăţi şi formăm pâinici rotunde, pe care le punem în tăvi acoperite cu hârtie de copt.




Le acoperim cu un prosop curat şi le lăsăm să crească 30 de minute.



Când au trecut 15 minute, preîncălzim cuptorul la foc potrivit.
Inainte de a coace pâinile, le ungem cu ou bătut.




Le coacem la foc potrivit circa 35-40 de minute până devin aurii (sau brun-aurii, depinde de cuptor) – primele s-au copt repede în partea de jos şi cum mi-era frică să nu se ardă nu le-am mai ţinut ca să facă acea crustă deasupra, a treia mi-a ieşit însă perfect.



Le scoatem pe un grătar şi le lăsăm să se răcească, apoi le împachetăm în folie de plastic şi le ţinem într-un loc uscat şi răcoros – se păstrează pufoase cam o săptămână.

This is how I got to Norway these days, with this Christmas bread. It's one of the best things I ever made and I will definitely "come back" in Norway, and not necessarily for Christmas.
I had found for a while this recipe from the first Norwegian cook book, by Hanna Winsness, but it was hard to understand the quantities. So, I looked and looked and found this blog with Scandinavian recipes, among which one for julekake. So I baked myself some Norwegian Christmas Bread! It's easy to make and very very tasty! In Norway it is eaten with butter and geitost, a traditional Norwegian brown cheese. I enjoyed it simple, with a cup of milk.

JULEKAKE

  • 280 g unsalted butter
  • 600 ml milk
  • 50 g fresh yeast
  • 1 kg flour
  • 125 g sugar
  • 1 teaspoon salt
  • 2 teaspoons ground cardamom
  • 150 g raisins
  • 100 g candied citrus peel
For brushing the loaves of bread:
  • 1 egg

We melt the butter in a saucepan.
When it's melted, we remove from heat and add in the milk. We mix and let it cool until lukewarm.
In a large bowl we put the flour (we should sift it 2 or 3 times), the crumbled yeast, sugar, salt and cardamom and combine them.
We add in the butter and milk mixture and stir well with a wooden spoon, then knead carefully - if the dough is too sticky, we can add some more flour (I used only the 1 kg).
We fold in the raisins and candied peel (finely diced). We knead lightly for another 5 minutes until the fruits are well incorporated in the dough (because the dough is very fat, the fruits have a tendancy to fall out).
We leave the dough in the bowl and cover it with plastic wrap. We leave it to rise in a warm place, for about 45 minutes, until double in size.
We can make 2 larger loaves or 3 smaller. I made 3 and baked 2 in a tray and a third one separately. I left the third to rise for a longer time and it came out bigger than the others. Next time I think I will make only 2.
So we divide the dough in two or three pieces and form round loaves, then put them on trays lined with parchment paper.
We cover them with a clean dish cloth and allow to rise for 30 minutes.
After 15 minutes, we preheat the oven to medium heat.
Before baking the loaves, we brush them with whisked egg.
We bake the loaves to medium heat for 35-40 minutes until deep golden brown – my first two loaves baked quickly on the bottom side and I feared that they might burn so I didn’t let them until golden brown, but the third came out just perfect.
We allow them to cool on a wire rack, then wrap them in plastic and keep them in a dry and cold place – they will remain soft for about one week.
