How to: Unt de dovleac / Pumpkin Butter


Pentru cei care nu au auzit până acum de unt de dovleac: nu, nu are deloc unt şi niciun fel de altă grăsime. Are ca bază piure de dovleac şi îl puteţi folosi întins pe pâine, prăjiturele, brioşe, cu clătite şi alte prăjituri. Sunt multe reţete pe internet şi multe din ele necesită multe ingredient, timp îndelungat şi, uneori, ustensile special. După ce am citit câteva reţete, am hotărât să mă folosesc de aceasta, pentru ingredient, şi de aceasta pentru instrucţiunile de preparare. Am făcut un borcan pentru a vedea cum iese. A fost uşor de făcut şi foarte gustos. Apoi l-am refăcut pentru tortul fratelui meu, cu mai puţine condimente de data aceasta pentru că prima dată mi se păruse totuşi prea condimentat pentru gustul meu. De asemenea, prima oară am folosit zahăr brun: asta i-a dat o aromă mai intensă de caramel, dar şi o culoare mai închisă. Aşa că acum am folosit zahăr alb, pentru că voiam o culoare mai intensă. Alegeţi voi pe care variantă o preferaţi.

UNT DE DOVLEAC


  • 450 g piure de dovleac
  • 100 g zahăr (alb sau brun)
  • 1 linguriţă scorţişoară
  • ⅛ linguriţă ghimbir pudră
  • ⅛ linguriţă nucşoară măcinată
  • ⅛ linguriţă cuişoare măcinate
  • ½ linguriţă extract de vanilie

Amestecăm piureul de dovleac, zahărul şi condimentele într-o cratiţă (de preferat una cu fund dublu).



Acoperim cratiţa cu un capac, pe care îl sprijinim cu o lingură de lemn.
Punem cratiţa pe foc mediu spre mare până ce piureul începe să fiarbă.



Micşorăm acum focul la mic spre mediu şi gătim dovleacul cam 10 minute, amestecând uşor cu lingura de lemn. Dacă untul s-a îngroşat bine încât nu curge de pe lingură, este gata.



Adăugăm extractul de vanilie, amestecăm, apoi lăsăm untul să se răcească bine.



Punem untul răcit într-un borcan şi îl putem păstra la frigider până la 2-3 săptămâni.

For those who never heard of pumpkin butter: no, it contains no butter and no other fat. It's pumpkin puree based and you can use it spread on bread, scones, muffins, with pancakes and any other delicious cakes. There are many recipes on the internet and many require lots of ingredients, time and, in some cases, special equipment. After reading a few recipes, I decided to guide myself after this one, for the ingredients, and this one for the instructions. I made one batch to see how it goes and it was really easy to make and tasty. Then I made it for my brother's birthday cake, using smaller quantities of spices as I found it a little too flavored for my taste the first time. Also, the first time I used brown sugar: it gave an extra caramel flavor, but it darkened the butter. So this time I used granulated sugar, because I wanted a more intense color. You can use the one you prefer.

PUMPKIN BUTTER

  • 450 g pumpkin butter
  • 100 g sugar (granulated or brown)
  • 1 teaspoon cinnamon
  • ⅛ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ½ teaspoon vanilla extract

Combine the pumpkin puree, sugar and spices in a saucepan (preferably a double bottom saucepan).
Cover the saucepan with a lid and prop it with a wooden spoon.
Bring the puree to a low boil, over medium to high heat.
Reduce the heat to low-medium and cook the pumpkin for about 10 minutes, stirring carefully with the wooden spoon. If the butter is thick enough that it doesn’t run off the spoon, then it’s done.
Add the vanilla extract to the butter, mix and then let it cool completely.
Transfer the cooled butter in a sealed jar and keep it in the fridge up to 2-3 weeks.
