Tort “Dansul Îngerilor” / “Angels' Dance” Cake


Nu putea să treacă Moş Nicolae fără să lase un tort pentru mama mea, care îi poartǎ numele. Un tort de sezon, micuţ, simpatic foc, aromat... un frumos dans al îngerilor din turtă dulce şi ciocolată.
Reţetă inspirată din revista VEG, numărul de iarnă 2013 (p. 44), un proiect al Andreei Crăciun.

TORT “DANSUL ÎNGERILOR”



Foi de turtă dulce:
  • 400 g făină
  • 1 linguriţă praf de copt
  • 1 linguriţă bicarbonat
  • ¼ linguriţă sare
  • 1 linguriţă scorțişoară
  • 1 linguriţă ghimbir mǎcinat
  • 1 linguriţă nucşoară
  • ½ linguriţă cuişoare măcinate
  • 120 g unt, la temperatura camerei
  • 100 g zahăr brun
  • 120 g melasă
  • 1 ou
Cremă de ciocolată:
  • 200 g ciocolată neagră
  • 200 g ciocolată cu lapte
  • 200 ml smântână dulce
  • 1 lingură Cointreau (eu am pus un lichior grecesc, după gust părea să fie tot din portocale)
Plus:

Pentru aluat, cernem făina şi o amestecăm cu praful de copt, bicarbonatul, sarea, scorţişoara, ghimbirul, nucşoara şi cuişoarele.



Într-un castron mare mixăm untul cu zahărul, melasa şi oul.



Folosind o lingură de lemn sau o spatulă, încorporăm treptat amestecul de făină. Când aluatul începe să se lege, frământǎm câteva minute, până obţinem o minge de aluat.






Învelim aluatul în folie de plastic şi îl lăsăm să se odihnească la frigider 2-3 ore (se poate ţine şi peste noapte).



Pentru cremă, rupem într-un castron cele două tipuri de ciocolată, adăugăm smântâna şi le topim pe baie de aburi, până obţinem o cremă fină.





Lăsăm crema la răcit – crema se va întări pe măsură ce se răceşte. Adăugăm apoi lichiorul şi amestecăm bine pânǎ se încorporează.




Scoatem aluatul din frigider şi îl mai frământǎm puţin pe un blat presărat cu puţină făină, cât să îl înmuiem puţin pentru a-l putea întinde uşor.


Întindem jumătate din aluat într-o foaie de circa 5 mm şi decupăm un cerc de circa 15-18 cm. Refacem foaia şi mai tăiem un cerc. Repetăm pentru a treia oară, astfel că, din jumătate de aluat obţinem 3 foi. Aluatul rămas îl punem deoparte.



Repetăm procedura cu cealaltă jumătate. La final, vom avea 6 foi de aluat şi încă o bucăţică de aluat. O întindem şi decupăm îngeraşi (sau alte forme: steluţe, brazi, oameni de zăpadă, fulgi de zăpadă etc.) – cu forme potrivite ca mǎrime ar trebui să obţinem 6 turte dulci.


Coacem foile şi formele de turtă dulce la foc potrivit, în cuptorul încins, circa 10-12 minute (pe raftul din mijlocul cuptorului). Atenţie! Cu cât coacem de mai multe ori, cu atât temperatura în cuptor se va mări şi va trebui să micşorăm timpul de coacere pentru a nu arde turta dulce (se poate ajunge chiar pe la 5-7 minute). Dacă deasupra este făcută, încercaţi să ridicaţi foarte puţin turta dulce cu o spatulă lată – dacă nu este foarte moale, puteţi să o scoateţi.




Lăsăm turta dulce în tavă câteva minute să se răcorească şi să se întărească puţin, apoi o transferăm pe un grătar, unde o lăsăm să se răcească bine.




Pe platoul pe care vom servi tortul întindem puţină cremă de ciocolată pentru a fixa tortul.


Aşezăm o foaie de turtă dulce, apoi întindem puţină cremă (ca să fie mai uşor, puteţi împărţi crema de la început în şase castronele, păstrând cam o linguriţă).




Aşezăm următoarea foaie, apoi punem cremă şi tot aşa până la ultima foaie, peste care punem ultima parte din cremă.





Cu ciocolata pusă de-o parte lipim îngeraşii de turtă dulce (sau ce forme aţi ales) pe lateral, la distanţe egale – astfel delimităm şi porţiile.




Peste ultimul strat de ciocolată presărăm câteva cubuleţe de coajă de portocală confiată.


Decorăm cu o steluţă de anason şi e gata!

TIP: Dacă vreţi să aveţi o cremă fluidă, o pregătiţi după ce aţi copt foile şi o lăsaţi doar să se răcorească puţin, după care adăugaţi lichiorul şi o turnaţi peste foi.

“ANGELS' DANCE” CAKE

Gingerbread layers:
  • 400 g flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon powder ginger
  • teaspoon nutmeg
  • ½ teaspoon ground cloves
  • 120 g butter, at room temperature
  • 100 g brown sugar
  • 120 g molasses
  • 1 egg
Chocolate cream:
  • 200 g dark chocolate
  • 200 g milk chocolate
  • 200 ml heavy cream
  • 1 tablespoon Cointreau (I used a Greek liquor, it tasted like orange too)
Plus:

For the dough, sift the flour and stir in the baking powder, baking soda, salt, cinnamon, ginger, nutmeg and cloves.In a large bowl whisk the butter, sugar, molasses and egg.
Using a wooden spoon or a spatula, fold in gradually the flour mixture. When the dough is coming together, use your hands to knead a few minutes, until you get a ball of dough.
Wrap the dough in plastic and leave it to rest in the fridge for 2-3 hours (or overnight).

For the cream, break the two types of chocolate into pieces in a bowl, add the heavy cream and melt them over simmering water, until you obtain a smooth cream.

Let the cream cool – it will become solid when cold. Add in the liquor and mix well until smooth.

Remove the dough from the fridge and knead it a little bit more on a board dusted with some flour, just enough to make it softer; it will be easier this way to roll it.
Roll half of the dough into a 5 mm sheet and cut a 15-18 cm circle. Roll again the dough and cut another circle. Repeat for the third time; you will now have, from half of the dough, 3 circles. Put the remaining dough aside.
Repeat with the other half of the dough. In the end, you will have 6 circles and another ball of dough. Roll it and cut angels (or other forms: stars, Christmas trees, snowmen, snowflakes etc.) – using medium sized cutters you will have 6 cookies.
Bake the circles and the cookies to medium heat, in the preheated oven, for 10-12 minutes (on the middle shelf). Be careful! When you bake a few times in a row, the temperature inside will rise, so you will have to bake the gingerbread less, otherwise it will get burnt (it may come to 5-7 minutes). If on top is baked, check the gingerbread on the bottom by lifting it just a little bit using a wide spatula – if it is not too soft, you can remove it from the oven.
Let the gingerbread rest (and harden) in the tray for a couple of minutes, then transfer it on a wire rack and let it cool.

On the plate you want to build and serve the cake spread some chocolate cream in order to fix the cake.
Place one gingerbread layer, spread on top some chocolate cream (it will be easier if, before starting, you divide the cream in 6 bowls, putting aside like a teaspoon).
Place another gingerbread circle, then cream and repeat until the last circle; cover it with the last portion of cream.
Use the chocolate cream you saved to stick the gingerbread angels on the side of the cake, at even distance – thus, you will also define the portion.
On top of the cake sprinkle some candied orange peel cut into cubes.
Decorate with a star anise and it's done!

TIP: If you want a fluid cream, prepare it after baking the gingerbread and leave it just to cool a bit, then add the liquor and spread it over the gingerbread circles.
